【Ingredients】: 

Eggs: 3

Whole wheat flour: 50g

Coffee liquid: 35g

Milk: 15g

Dark chocolate: 20g

Sugar: 35g

Lemon juice: a few drops


【Steps】:

1. Separate the egg yolk and egg white, add coffee liquid and milk to the egg yolk, mix well, add whole wheat flour, and mix well.

2. Add a few drops of lemon juice to the egg white, add sugar in 3 times, beat to small sharp corners, scoop out 1/3 of the meringue into the egg yolk paste, stir evenly

3. Pour back into the meringue, stir all the ingredients evenly, put them into the mold, shake out large bubbles at a high place, preheat the oven at 140℃ / 285℉, and bake the middle layer for about 50 minutes

4. Reverse immediately when out of the oven, and demould after letting cool.


【Tips】:

1. When sending egg whites, be sure to send them in place‼ 

2. When mixing with egg yolk batter, pay attention to the technique. Enter at two o'clock and leave at eight o'clock.  Prevent the meringue from defoaming and the cake will not become fluffy.‼ ️

3. In addition, the temperature of the oven should not be too high, otherwise it will explode when baking.
