【Ingredients】: (materials can be made into 12 cookies)

Softened butter:80 g

Salt:1 g

Icing sugar:35g (sieved)

Low-gluten flour:95g (sieved)

Egg white:15 g

Almond flour:25 g

Lemon shavings:Moderate

Decorate chocolate:Moderate

【Step】:

1. Pour the softened butter into a clean container and stir it slightly (don’t over-smear it, after the over-sent cookie paste enters the oven, the squeezed lines will disappear)

2. Then we add powdered sugar to the softened butter and continue to stir, add salt, lemon shavings, almond flour, a small amount of low-gluten flour (the reason for adding a small amount of low-gluten flour in advance is to prevent separation of butter and egg whites during mixing ), continue to stir, add egg whites, and then stir

3. Finally, we pour the remaining low-gluten flour into the cookie paste, and use a stirring rod to mix the cookie paste evenly

4. Then pour the cookie paste into the piping bag (the piping mouth is hexagonal)

5. Take out the baking pan, squeeze the cookie paste out of "one and a half S shape", after preheating the oven, put the baking pan in the oven 170℃ / 340℉, 20 minutes

6. After the baked cookies are cool, dip the cookies in tempered dark chocolate (tempered chocolate can be warmed with warm water to ensure that it will not solidify quickly) and put the chocolate cookies on the shelf to dry Dry

【Tips】:

About whisking butter: The way to whisk butter is actually to use a manual whisk to constantly stir the softened butter (beating air into the butter) until its color turns slightly white. Cookies made with butter will be more crispy.
