【Ingredients】:

Duck leg: 1

Duck Fat: 400g

Salt: 3g

Black Pepper: 5g

Garlic: 3 pieces

Red onion: One

Thyme: 1 stick


sauce:

Balsamic vinegar: 45g

Honey: 15g

Yellow mustard: 15g

Juniper berries: 10


【Step】:

1. Dry the duck legs with kitchen paper towels, sprinkle both sides with salt and black pepper (you can use a little more salt), and marinate in the refrigerator overnight.

2. The next morning, wipe all the water off with paper towels, put it in the baking tray, melt the duck fat and pour it in until the duck's legs (it doesn't matter if the duck is a little bit oily). Then add garlic, shallots and thyme to the oil to enhance the flavor.

3. Preheat the oven to 120℃ / 250℉ Celsius, cover the baking tray with foil and bake at a low temperature for about 3 hours, until the duck legs are soft enough to come apart easily. Shake the bones to see if it is bone-off.

4. In a saucepan, without pouring oil, remove the duck legs from the oil and fry them skin-side down until crispy, then turn over and cook for another 2 minutes before turning off the heat. The duck needs to rest for 10 minutes before serving.

5. In a small pan, add all the ingredients for the sauce and stir well with the whisk on medium heat until bubbling and thickening.
