【Ingredients】:
High Powder 400g
Cake Flour 100g
Granulated sugar 80g
Salt 10g
Fresh Yeast 20g
Egg 25g
Water 220g
Ghee 50g
Oil 250g
【Step】:
1. Mix everything together until it looks like a light film. Turn the dough round and relax at room temperature for 20 minutes.
2. Roll it out flat and place it in the refrigerator to freeze. Cover the frozen dough with grease.
3. Fold the dough dry by 4 times and 3 times and put it in the refrigerator for 30 minutes.
4. Roll to a thickness of 0.4cm.
5. Divide the dough into isosceles triangles and roll it from back to front.
6. Roll to the middle and roll loosely to prevent gluten breakage during baking.
7. Ferment for 60 minutes.
8. Ferment well, brush egg liquid on the surface, bake at 190℃ / 375℉ for 16 minutes.
